Smoked Duck Breasts

INGREDIENTS

  • 2-4 duck breasts

  • Poultry rub

INSTRUCTIONS

  1. Preheat your smoker to 225°F using Cherry or Maple wood.

  2. Score the skin side of the duck breasts in a cross-hatch/diamond pattern. Be careful to cut only through the fat, not into the meat.

  3. Pat the meat dry with paper towels, then apply the dry rub generously to both sides.

  4. Place the duck breasts in the smoker, skin-side up.

  5. Smoke until the internal temperature reaches 135°F for a perfect medium-rare.

  6. Remove from the smoker and let them rest for 10 minutes before slicing.
