Seafood Rub

Smoked Shrimp

INGREDIENTS

  • 1 lb Jumbo shrimp (16-20 count, peeled and deveined, tails left on preferred)

  • 1 tbsp melted butter

  • 1.5 tbsp Seafood rub or Old Bay

INSTRUCTIONS

  1. Preheat your smoker to 225°F using Apple or Cherry wood.

  2. Ensure the shrimp are completely thawed. Pat them completely dry with paper towels to help the butter and rub adhere.

  3. Toss the shrimp in a bowl with the melted butter until lightly coated. Sprinkle the rub over the top and toss again to ensure even distribution.

  4. Because shrimp are small and can easily drop through standard grates, arrange them in a single layer on a wire cooling rack, a perforated grill mat, or a cast-iron skillet.

  5. Place the rack or skillet directly onto the smoker grates.

  6. Smoke at 225°F for only 20 to 30 minutes. Shrimp cook exceptionally fast and will become rubbery if overdone. Keep a close eye on them; they are finished when they curl slightly into a "C" shape, turn opaque, and show a beautiful pink edge.

  7. Remove immediately from the heat once they hit an internal temperature of 120°F. Serve warm right away, or chill them down immediately for an incredible smoked shrimp cocktail.
