Poultry Rub

INGREDIENTS
1 Whole turkey breast (4-7 lbs, bone-in or boneless, skin-on preferred)
3 tbsp Unsalted butter
1/4 cup Poultry rub
2 tbsp Melted unsalted butter
1 tbsp Chopped fresh thyme
INSTRUCTIONS
Preheat your smoker to 275°F using Cherry or Maple wood.
Pat the turkey breast completely dry. Remove any plastic netting if present.
Coat the entire bird in a thin layer of butter. Season generously with the rub, ensuring you cover all surfaces.
Place the turkey breast directly on the smoker grates, breast-side up.
Smoke at 275°F until the internal temperature reaches 150°F.
If the turkey is skin-on and you desire crispy skin, increase the smoker temperature to 375°F (or transfer the breast to a 375°F oven/grill). This high heat will render the fat and produce a crispy skin while bringing the turkey to its final safe temperature.
Remove the turkey breast from the smoker when the internal temperature reaches exactly 160°F. (It will rise about 5°F during the rest.)
Let the turkey breast rest, loosely tented with foil, for at least 15 to 20 minutes before carving.
