Poultry Rub

INGREDIENTS
1 whole chicken (4-5 lbs)
2 tbsp olive oil (as a binder)
1/4 cup Poultry BBQ Rub (herb-forward blend)
1 lemon, halved
3 cloves garlic, smashed
2 sprigs fresh rosemary
INSTRUCTIONS
1. Preheat your smoker to 275°F-300°F using hickory or apple wood.
2. Pat the chicken completely dry with paper towels to ensure crispy skin.
3. Rub the chicken lightly with olive oil and season generously on all sides, including under the wings and legs.
4. Stuff the cavity with lemon halves, smashed garlic, and rosemary sprigs.
5. Place the chicken in the smoker and cook until the thickest part of the breast reaches an internal temperature of 165°F (approx. 2.5 to 3 hours).
6. Let the bird rest for 20 minutes before carving to retain the juices.
