INGREDIENTS

  • 2 racks of spare ribs or baby back ribs

  • 1/4 cup yellow mustard (as a binder)

  • 1/2 cup BBQ Dry Rub

  • 1/2 cup apple juice (for spritzing only)

INSTRUCTIONS

1. Preheat smoker to 250°F using fruitwood.
2. Remove the membrane from the back of the ribs.
3. Apply a thin layer of mustard and season thoroughly with the dry rub.
4. Place the ribs on the smoker grate, meat-side up.
5. Smoke for 5 to 6 hours, spritzing with apple juice every hour after the second hour to keep the surface from drying out.
6. The ribs are done when the meat has pulled back about 1/2 inch from the bone ends and they have a nice ""bend"" when lifted with tongs.
7. Let rest for 15-20 minutes before slicing.
