INGREDIENTS
3-4 lbs beef short ribs
1 tbsp garlic powder
1 tbsp onion powder
Salt and pepper to taste
Optional: 1/4 cup beef tallow (for wrapping)
INSTRUCTIONS
1. Preheat your smoker to 250°F using Post Oak or Pecan wood
2. Pat the ribs dry and apply your spice misture generously over all surfaces.
3. Place the ribs in the smoker.
4. Monitor the internal temperature, be prepared for the stall between 155°F and 170°F.
5. Once the bark is set, you may choose to wrap the ribs (adding a bit of tallow if desired) to help them power through the stall.
6. Continue smoking until the internal temperature reaches 205°F.
7. Rest for at least 45-60 minutes before serving to ensure the meat is tender and the juices have redistributed.
