Smoked Bacon Wrapped Jalapeno Poppers

INGREDIENTS

  • 10-12 Large fresh jalapeños

  • 1 Block (8 oz) Cream cheese, softened

  • 1 Cup Sharp cheddar cheese, shredded

  • 1 tsp Garlic powder

  • 1 tsp Onion powder

  • 10-12 Slices of thin-cut bacon (cut in half, crosswise)

  • 2 tbsp BBQ rub

INSTRUCTIONS

  1. Preheat your smoker to 225°F - 250°F using Hickory or Pecan wood.

  2. Slice the jalapeños in half lengthwise. Use a spoon to scrape out the seeds and ribs (leave a few seeds if you want an extra kick of heat).

  3. In a medium bowl, mix together the softened cream cheese, shredded cheddar, garlic powder, and onion powder until smooth.

  4. Fill each jalapeño cavity generously with the cream cheese mixture, smoothing it down flat with the edges of the pepper.

  5. Wrap each stuffed pepper tightly with a half-slice of bacon. Ensure the ends of the bacon are tucked underneath the pepper so they stay secure during cooking.

  6. Dust the tops of the bacon-wrapped poppers lightly with BBQ rub.

  7. Arrange the poppers face-up on a baking sheet lined with foil or directly onto a smoker rack.

  8. Smoke for 1.5 to 2 hours, until the bacon becomes bite-through tender and beautifully browned, and the jalapeños have softened.
