INGREDIENTS
1 Block (8 oz) full-fat cream cheese
1 tbsp Olive oil
1-2 tbsp BBQ rub
INSTRUCTIONS
Preheat your smoker to 225°F using Apple or Pecan wood.
Place the block of cream cheese on a small sheet of aluminum foil or a small disposable foil boat.
Lightly score the top of the cream cheese block in a cross-hatch or diamond pattern, cutting about 1/4 inch deep.
Coat the block with a tiny drizzle of olive oil, then season generously with BBQ rub.
Place the foil-backed cream cheese directly onto the smoker grate.
Smoke at 225°F for 2 hours until the cheese expands slightly, the outer edges develop a beautiful golden-brown color, and the scored lines open up.
Remove from the smoker and serve warm with crackers, pretzels, or a drizzle of warm pepper jelly over the top.
