Smoked Prime Rib Roast

INGREDIENTS

  • 1 Bone-in or boneless prime rib roast (typically 3-4 structural ribs, 6-8 lbs)

  • 3 tbsp Coarse kosher salt

  • 3 tbsp Coarse black pepper

  • 2 tbsp Garlic powder

  • 2 tbsp Fresh rosemary, finely chopped

  • 2 tbsp Fresh thyme, finely chopped

  • 2 tbsp Olive oil

INSTRUCTIONS

  1. Preheat your smoker to 225°F - 250°F using Post Oak or Pecan wood.

  2. Trim away any excessively thick areas of the outer fat cap, leaving a uniform layer of about 1/4 inch to protect the meat. If using a bone-in roast, ensure the bones are clean.

  3. Pat the roast completely dry with paper towels. Lightly coat the exterior with olive oil, then combine the salt, pepper, garlic powder, rosemary, and thyme to create an herb crust. Press the seasoning mixture firmly onto all sides of the roast.

  4. Place the roast onto the smoker grates, fat-cap side up.

  5. Smoke for approximately 30 minutes per pound until the internal temperature in the absolute center of the roast reaches 135°F for a perfect medium-rare.

  6. Remove the roast from the smoker, cover loosely with aluminum foil, and let it rest for 20 to 30 minutes before carving.
