Smoked Chicken Wings

INGREDIENTS

  • 3-4 lbs fresh chicken wings (split into flats and drumettes)

  • 1 tbsp baking powder
    -1 tbsp oil

  • 1/2 cup Poultry Rub or BBQ Rub

INSTRUCTIONS

  1. Preheat your smoker to 275°F - 300°F using Pecan or Cherry wood.

  2. Pat wings thoroughly dry with paper towels.

  3. Lightly coat the wings with oil.

  4. Toss wings with the baking powder and Poultry or BBQ Rub.

  5. Smoke the wings for 45-60 minutes, or until the internal temperature reaches 175°F.

  6. If desired, finish under a broiler or on a high-heat grill for 2-3 minutes per side to crips the skin before tossing in sauce.
