Sweet BBQ Rub

INGREDIENTS
2 racks of spare ribs or baby back ribs
1/4 cup yellow mustard (as a binder)
1/2 cup BBQ Dry Rub
1/2 cup apple juice (for spritzing)
1/4 cup honey (for the wrap phase)
2 tbsp butter (for the wrap phase)
1/2 cup BBQ sauce (for glazing)
INSTRUCTIONS
Preheat smoker to 250°F using fruitwood.
Remove the membrane from the back of the ribs.
Apply a thin layer of mustard and season thoroughly with the dry rub.
Smoke for 3 hours, spritzing with apple juice every 45 minutes after the first hour.
Lay ribs on aluminum foil, drizzle with honey and add pads of butter.
Wrap tightly and return to the smoker for 1.5 to 2 hours.
Unwrap, brush with BBQ sauce, and place back on the smoker for 15-20 minutes to set the glaze.
Let rest for 15 minutes before slicing into individual ribs.
