INGREDIENTS
1 full rack of beef plate ribs (3-4 bones)
1/4 cup yellow mustard (as a binder)
1/2 cup Texas-Style Rub (Equal parts coarse salt and coarse black pepper)
1/2 cup beef tallow (optional, for wrapping)
INSTRUCTIONS
Preheat smoker to 250°F using post oak or hickory wood.
Remove the tough membrane from the bone side of the ribs.
Trim any large, hard fat deposits from the meat side, but leave the intramuscular fat.
Apply a light binder of mustard and season heavily with the salt-and-pepper rub.
Place the ribs in the smoker and cook until the bark is dark and set (usually around 165°F - 170°F).
Wrap the ribs tightly in pink butcher paper (adding a smear of beef tallow inside if desired).
Return to the smoker and continue cooking until they probe tender like warm butter (around 203°F - 205°F internal).
Rest in an insulated cooler for at least 1 hour before serving.
