Sweet BBQ Rub

INGREDIENTS
4-5 lb slab of fresh pork belly (skin removed)
1/2 cup BBQ Dry Rub
1/2 cup salted butter (cubed)
1/2 cup honey
1 cup BBQ sauce
INSTRUCTIONS
Preheat your smoker to 250°F using fruitwood or pecan.
Cut the pork belly into 1.5-inch cubes.
Toss the cubes in a bowl with a light coating of binder (oil or mustard) and coat evenly with your dry rub.
Place the cubes on a wire rack in the smoker for about 2.5 to 3 hours until the bark is deep mahogany.
Place the cubes into a disposable aluminum pan.
Add the cubed butter, honey, and BBQ sauce over the top, tossing gently to coat.
Cover the pan with foil and return to the smoker for 1 to 1.5 hours until the meat is butter-tender.
Remove the foil and cook for an additional 15 minutes to let the sauce glaze and tighten up.
