Smoked Lobster Tails

INGREDIENTS

  • 4 Large lobster tails (6-8 oz each)

  • 4 tbsp Unsalted butter, melted

  • 2 Garlic cloves, finely minced

  • 1 tsp Fresh lemon juice

  • 1/2 tsp Paprika

  • 1 tbsp Fresh parsley, finely chopped

  • Pinch of Kosher salt and coarse black pepper

INSTRUCTIONS

  1. Preheat your smoker to 225°F using Apple or Maple wood.

  2. While the smoker is heating, butterfly the lobster tails: Using sharp kitchen shears, cut down the center of the top shell all the way to the base of the tail (do not cut through the bottom shell or the tail fan).

  3. Gently pry the shell open slightly and use your fingers to separate the meat from the bottom shell, keeping it attached at the base. Lift the lobster meat up and rest it on top of the closed shell halves (piggyback style).

  4. In a small bowl, mix together the melted butter, minced garlic, lemon juice, paprika, salt, and pepper.

  5. Brush the garlic butter mixture generously over the exposed lobster meat.

  6. Place the prepared lobster tails directly onto the smoker grates, shell-side down.

  7. Smoke for approximately 45 to 60 minutes, checking with a digital thermometer, until the meat is opaque and reaches an internal temperature of 140°F. Do not overcook or the tail will become rubbery.

  8. Remove from the smoker, garnish with fresh parsley, and serve warm with extra butter and lemon wedges.
