Smoked Whole Hog

INGREDIENTS

  • 1 Whole hog (dressed, about 40-60 lbs)

  • 1 cup Yellow mustard

  • 3 cups Pork rub

  • Apple cider vinegar (for mopping)

  • 1 cup Apple juice and 1/2 cup melted butter (for injection)

INSTRUCTIONS

  1. Preheat your smoker to 225°F - 250°F using Hickory or Apple wood.

  2. Ensure the hog is thoroughly cleaned and dried. Inject the shoulders and hams with the mixture of apple juice and melted butter.

  3. Apply the mustard over the entire skin and meat surfaces, then coat heavily with the dry rub.

  4. Place the hog in the smoker. Every 60-90 minutes, spray or mop the meat with apple cider vinegar to keep the exterior from drying out.

  5. Cook until the internal temperature reaches 195°F - 205°F.

  6. Let the hog rest for at least one hour before pulling the meat.
