Smoked Chuck Roast

INGREDIENTS

  • 3-4 lb beef chuck roast

  • 2 tbsp BBQ rub

  • Salt and pepper to taste

  • Optional: Beef broth or tallow (for the wrap)

INSTRUCTIONS

  1. Preheat your smoker to 225°F - 250°F using Hickory or Post Oak wood.

  2. Pat the roast dry and apply your rub, salt, and pepper generously over all sides.

  3. Place the roast on the smoker grate.

  4. Smoke until it reaches an internal temperature of 150°F - 165°F.

  5. Remove the roast and wrap it tightly in butcher paper or foil. You can add a splash of beef broth or a tablespoon of tallow at the stage to boost moisture.

  6. Place the wraped roast back on the smoker and continue cooking until it reaches an internal temperature of 203°F.

  7. Rest for at least 1 hour before slicing or shredding.
